Prince Rupert’s footing as a capital of Good Food in the Northwest just got stronger.
Friends and partners-in-cooking Akhil Prakash and Joice Philip, former chefs for a number of world-class hotels (including Rupert’s own Crest Hotel), were inspired to utilize their skills to create new flavours for a unique menu not yet seen in Prince Rupert. The aim was an ambitious mix of Indian and Mediterranean cuisine and they had the confidence they could pull it off. Akhil and Joice approached Community Futures for start-up assistance and soon opened their doors within the Pacific Inn late April to a quick surge of curious customers. Like any small business, the beginning had its difficulties, but the chefs are quickly learning and adapting to their new lifestyle.
Four months into operation and Akhil and Joice are relishing living out their dream. The Olive has already defined itself as a go-to restaurant for many Rupertites. "Most of our customers are regulars", said Joice. "There is a lot of familiarity. And now, they tell their friends to come by." Popular dishes include their curries and pastas, and their Kick-Bang Shrimp is also a hit.
